From Sicily’s sun-drenched shores to the kitchens of France and Belgium’s Michelin stars, Girolamo Lombardo has refined the art of simple, soulful cooking. Known to friends as Domi, he’s passionate about nothing going in the bin—turning carrot tops into pesto, broccoli stems into slaw, and stale bread into crouton magic.
